I used Lactaid Fat Free Milk, and mixed panko with the cornflakes. It came out awesome. I didn't even miss the skin that I took off. Was great not having to turn the chicken over. Cooked all the way through.
Wonderful flavor, I soaked the chicken in the buttermilk and skipped the flour and dredged the chicken in the cornflake crumb mixtue. I also lightly sprayed the chicken with Pam before baking. It was a big hit.
I used non fat plain greek yougart instead of the recommended buttermilk, and it worked beautifully. Great recipe. The chicken was moist and flavorful.
Great recipe, easy to make. I added onion powder and black pepper to the seasonings. Very moist. The half cup of corn flake crumbs does not go far so be careful you dont use them all up before you get to the last piece of chicken you are preparing.
